The ingredients needed to make Pork Belly in Sherry Marinade:
- Take 4-6 slices pork belly
- Prepare 4-5 tbsp dry sherry wine
- Take 1 tsp pimento paste (see step)
- Get 1 tsp House seasoning (see step)
- Take 1 tsp garlic paste
- Prepare 2 dry bay leaves
- Take 3-4 garlic cloves, chopped
- Prepare Juice of half lime

- Take 2-4 dried chillies, crushed (depending on preference)
Pour the marinade over the pork belly. Cover and refrigerate four hours or overnight. Note - you can wash off the marinade if you want to avoid burning spots, but it'll result in a slightly lighter taste. Blend all the ingredients and pour the marinade over you meat.
Instructions to make Pork Belly in Sherry Marinade:
- Mix all the marinade ingredients together in a bowl.

- Place the pork belly in a bowl and coat well with the marinade. Allow to marinade for at least 4 hours. Preferably overnight to 48 hours for better flavours. Turning the meat once so that both sides are evenly marinaded.
- Heat the coals or grill.
- Drain from the marinade and cook on each side for 5-8 minutes or until fully cooked through and slightly crispy on the outside.
Note - you can wash off the marinade if you want to avoid burning spots, but it'll result in a slightly lighter taste. Blend all the ingredients and pour the marinade over you meat. Arrange the marinated pork belly slices on a grill rack and place it on the middle rack of the oven with another baking pan placed below it to catch the drippings. Combine hoisin sauce, soy sauce, wine, honey, sugar, garlic, colouring (if using) and spice powder in a shallow bowl. Pour half of the sauce into a jug and reserve for later.
