Instructions to make Lemon doughnuts:
  1. In a small bowl, add in yeast, warm water and 1 teaspoon of sugar. Give it a quick stir and leave the yeast to bloom for 10 min.
  2. In a large bowl, mix all your dry ingredients: flour, sugar and lemon zest. Make a well at the center and add in your wet ingredients: milk, melted butter, egg, lemon juice, lemon essence and the bloomed yeast.
  3. Knead the dough until its done and soft. Grease the bowl and cover the dough with a olastic wrap. Leave it in a warm place to proof for 1 hr.
  4. After proofing, knead the dough slowly. Divide the dough into equal pieces. Roll out the pieces into a circle. Using a doughnut cutter… Cut equal sized pieces. If you don't have a doughnut cutter use the rim of glass to cut and a small sized bottle top to make the centre hole. Repeat until the dough is over.
  5. Put the cut doughnuts onto a tray… Cover them with a towel so that they can proof for an additional 30 min.
  6. Heat some oil in a pan… Do not let it be so hot as the doughnuts cook very fast. Fry them till browned. You can have them plain or coat them with lemon glaze. Enjoy
