Instructions to make Lemon π loaf:
- Prepare a cake tin. Preheat oven to 190 degree centigrade.
- Sieve flour, baking powder and soda-bi-carb together. Keep aside.
- Beat butter and sugar very well. Mix lemon peel.
- Mix curd and lemon juice and keep aside.
- Add sieved flour to the beaten sugar and butter alternately with curd and lemon juice mixture.Do not over mix.
- Put immediately in oven and bake at 190 degree centigrade for 30min.
- After removing from oven let it cool down for 10 min. The cake will be very soft.
- For the topping, heat sugar and lemon juice over low heat, till sugar dissolves. Stir continuously.
- Pierce the top of the cake with fork and pour this sugar lemon prepared topping on top of the cake. It will absorb all the mixture.cool the cake uncovered for at least two hours before serving.
