Little mushrooms are marinated in a zesty mixture. They're great for buffet style gatherings. They keep well for a long time in the fridge, or you may can them in mason jars and store in cupboard. This recipe was handed down to me from my Grandma.

The ingredients needed to make Marinated Mushrooms:
  1. Take Fresh mushrooms (400 g total)
  2. Make ready 100 grams King oyster mushrooms
  3. Make ready 100 grams Maitake mushrooms
  4. Make ready 100 grams Bunashimeji (Brown Beech) mushrooms
  5. Get 100 grams Bunapi (White Beech) mushrooms
  6. Get 50 ml Vegetable oil (or olive oil)
  7. Take 1/2 tsp Salt
  8. Prepare 1 dash Pepper

Tender mushrooms are soaked in a delectable mixture of extra virgin olive oil and vinegar flavored with garlic, shallots, fresh herbs and Italian seasonings. Drain and transfer to a bowl. Add red onion, oil, vinegar, oregano, parsley, garlic, peppercorns, coriander and salt. Taste and adjust seasoning, if needed.

Instructions to make Marinated Mushrooms:
  1. Cut the stems off of the mushrooms. Divide the mushrooms into bite-size pieces (shred your hands or cut).
  2. Bring a pot of water to a boil. Add Step 1 and quickly blanch. Drain.
  3. When mushrooms from (2) cool off, transfer to a container. Add the vegetable oil, salt and pepper and mix to make the marinade.
  4. Store in the refrigerator.

Add red onion, oil, vinegar, oregano, parsley, garlic, peppercorns, coriander and salt. Taste and adjust seasoning, if needed. Marinate in the refrigerator for several hours or overnight. Place the mushrooms in a bowl. In another bowl, whisk the remaining ingredients.
